On Sunday afternoon viewers were treated to an unusual sight — a giant pumpkin seed harvest. At 1pm sharp, Geddes zipped himself into a white hazmat-like suit, stuck a flashlight between his teeth, and shimmied into the belly of the pumpkin to gather the squash’s precious seeds. At one point he called in backup, and a second man zipped up and joined him in the hollowed-out pumpkin. While Geddes wasn’t sure if it was the first time two grown men have been in a pumpkin together, he was fairly certain it was the first time the phenomena had happened at the Botanical Gardens.

Roast plain sunflower seeds  on a cookie sheet in a 300 degreeFahrenheit oven for 15 to 25 minutes. If you like salted seeds, soak them overnight in a brine of two quarts of water to 1/4 to 1/2 cup of salt. The next morning, boil the seed brine with the seeds for a few minutes and drain. Spread the seeds on a cookie sheet and roast in a 200 degree Fahrenheit oven for three hours or until crisp. If roasted long enough, they are easy to shell. If preferred, you can baste them with just a little butter while they are roasting. Stir or shake occasionally so they roast evenly.

Remove the dill fronds from their stalks. Chop the fronds and add to the mackerel together with the crème fraîche. Coarsely grate the beetroot and fold gently and briefly into the mackerel. (If you over-mix, you will end up with a bright pink paste.) Cover and refrigerate until needed.

When the squash is cooked, gently reheat the lentils, if needed, and season to taste. Serve the lentils spooned into and over the squash, with the kale alongside, scattered with the garlic.
