Sunflowers have two main commercial uses, oil and confectionery (for direct seed consumption). Oil varieties of the flower have small, black, oil-rich seeds with thin hulls, which are pressed to produce an edible, almost tasteless, pale oil, rich in unsaturated fatty acids (especially oleic acid and linoleic acid). The oil is popular for cooking, margarine manufacture and even bio-diesel production. Leftovers from oil extraction are used to make high-protein animal feed. Confectionery types, on the other hand, have large, striped, oil-poor seeds with thick hulls. Both oil and confectionery types are the results of centuries of careful selection and breeding from wild plants.

These nutrient-packed nuts grow on a tree (botanically speaking they are seeds, not nuts, and are related to peaches and plums) and are believed to have originated in China and Central Asia, after which they soon spread to the Mediterranean region. They were referenced in both Ancient Egyptian and Roman culture, and were given to newlywed Roman couples as a sign of fertility. In the 1700s they were brought to California by the Spaniards, where they are now part of a thriving almond industry. Nutritionally speaking, almonds are an excellent source of protein, fiber, vitamin E, and several other nutrients. They may also help lower LDL (low-density lipids) cholesterol levels and reduce your risk of developing heart disease. They make a perfectly portable snack, whether roasted, raw, chopped, or ground into some delicious almond butter.

Scatter seeds in a single layer onto the baking sheet. Roast seeds for 25-35 minutes, until crisp, stirring after 15 minutes. Transfer to a paper towel and allow the seeds to cool completely before eating. To store, place seeds in a sealed container in the refrigerator.

You don’t usually find nut or seed butter in banana bread, but you may not make it any other way after tasting this. The sunflower butter is unmistakable without being overpowering and adds lots of filling fat to the grain-free recipe.
