Sunflower breeding continues in earnest today. New demands are placed on breeders by the environments in which farmers want to grow sunflowers and by consumers in the ways they want to use the harvest. Height, for example, is something every child wants their sunflower to achieve. But to the farmer, tall sunflowers must be avoided. Energy used to push up stems cannot be used to make seeds. And heavy rains and strong winds will knock over tall, top-heavy plants.

Typically wheat is more tolerant than barley, and barley is more tolerant than oat to fall frost. In the milk stage, temperatures below 0°C will impact yield and cause kernels to become light and shriveled. Frozen immature spikelets will also turn white. In the early dough stage, research has shown cereal crop yields will be affected once temperatures hit -6°C for at least one hour; seed germination is also reduced. Once again, kernels will be shriveled. Cereal plants in the mid to late dough stages will sustain less damage than plants exposed at the early dough stage.

One easy method involves peeling the pumpkin, removing the seeds and pulpy flesh, cutting it into cubes, adding salt, pepper and olive oil and roasting the cubes in the oven.

Put a large pan of well salted water on to boil. Preheat oven to 200˚C/Gas Mark 6. Peel the butternut squash and remove the soft, seedy core with a spoon, discard. Chop the squash into 1½ cm chunks.

To serve, place mounds of the mackerel and beetroot mixture on to pieces of cracker. You will need approximately 2 tbsp per person.
