The kind of impact James makes on the world is powerful. Power does elicit fear, and great power is only respected and embraced alongside the great responsibility that accompanies it. There’s no doubt James has learned a great deal from his very own Instagram story. About himself. About the forces both in his corner and across the canvas. What’s also clear is that James’ obsession to make the most of his agency in every facet of his life has him in never-before-seen territory for an athlete.
Seared foie gras ($29), whether a nod to classic fine dining or playing to the well-heeled neighborhood, feels almost obligatory in this context. But Gauthier handles it with skill, in a summery context with port reduction and sweet strawberries; or paired with pumpkin, huckleberries and a spicy mole as the weather grows cold.

Menus are getting pretty seedy. Restaurateurs are employing a wide variety of seeds to add textural interest to their dishes, but these days pumpkin seeds are first among culinary equals. This is especially true in the fall, when pumpkin seeds, or pepitas in Spanish, pop up all over menus. The seasonal Harvest Grain & Apple Salad at Columbus, Ohio-based Piada Italian Street Food, for example, received a boost from pumpkin seeds and pecans, while the Autumn Harvest Salad at Saladworks, based on Conshohocken, Pa., upped the flavor quotient with smoked-paprika pumpkin seeds. But theyâre not just an autumnal treat: The Kale Salad on offer year-round at Mighty Quinnâs Barbecue in New York City marries kale with shaved brussels sprouts and pumpkin seeds.

But that climatic handicap doesn’t dampen Young’s enthusiasm, nor his curiosity over what his hybrid plants will look like when mature
He spent the 1990’s figuring out how to make his business model work without having to fall back on the financial dependence of local farmers, while at the same time bringing them as much value as possible for their crops.

Lakewood Think you’re busy? Paul Fleischer probably has you beat. The full-time agriculture and special-needs teacher at Alameda International Jr./Sr. High School also farms a half-acre plot in Lakewood, tends a productive apiary, runs a CSA program, hosts on-property workshops, classes, and special events, and keeps his farm stand stocked with CFA products. (Not to mention parenting two young children with his wife, Chelsie.) The Fleischers hope to double down on their urban farm dream by buying 1.2 acres adjacent to their current plot in February, but in the meantime, the CFA allows them to “fill in the gaps and offer more variety,” Fleischer says. That translates to raspberry jam from the couple’s sprawling berry patch, eggs from their free-range chickens, and raw honey from the farm’s hives. But be forewarned: The Fleischers’ CFA products have a devoted neighborhood following. “We never have enough,” Fleischer says. He hopes the purchase of the additional acreage will remedy that problem—and allow him to make the switch to working their land full time. How To Buy: The Fleischers’ farm stand is closed for the season—it will reopen on June 15—but you can call or contact them online to purchase eggs ($6 per dozen) and honey (starting at $11 for an eight-ounce jar) throughout the winter, while supplies last. 2020 S.
